Ethylene oxide, also known as ethylene oxide, is a low-temperature broad-spectrum fungicide, but it has genetic toxicity and long-term ingestion may cause cancer. If high levels of ethylene oxide are ingested, it may cause acute poisoning. Mild symptoms include headache, dizziness, nausea, and vomiting, while more severe symptoms include weakness in the hands and feet and muscle tremors throughout the body. In severe cases, coma may occur. Long term small intake may lead to neurasthenia syndrome and autonomic nervous system dysfunction. Therefore, many countries and regions around the world have restricted or banned the use of ethylene oxide for food disinfection, such as China and the United States, which no longer allow its use to disinfect food ingredients. The "Disinfection Technical Specification" (2002 edition) clearly stipulates that ethylene oxide is not suitable for food sterilization. The EU's limit for ethylene oxide in food (calculated as the sum of ethylene oxide and 2-chloroethanol) is 0.02-0.10 mg/kg, while the maximum allowable residue level for ethylene oxide in food in the United States and Canada is 7 mg/kg, and for 2-chloroethanol it is 940 mg/kg. The residual amount of ethylene oxide detected in food stabilizers is mostly between 0.4 and 1.1 mg/kg.

环氧乙烷又名氧化乙烯,是一种低温的广谱杀菌剂,但环氧乙烷具有遗传毒性,长期摄入可能致癌。如果摄入高含量环氧乙烷的食品,可能会引起急性中毒,轻度症状表现为头痛、头昏、恶心和呕吐,较为严重者表现为手足无力和全身肌肉颤动,严重者会出现昏迷的症状。长期少量摄入,可能引发神经衰弱综合征和植物神经功能紊乱等。因此,全球众多国家地区已限制或禁止使用环氧乙烷进行食品消毒处理,比如中国、美国等都不再允许用它来消毒食品原料。《消毒技术规范》(2002 年版)中明确规定,环氧乙烷不适用于食品灭菌。欧盟对食品中环氧乙烷的限量(以环氧乙烷和2-氯乙醇之和计)为0.02~0.10 mg/kg,美国和加拿大食品中环氧乙烷的允许最大残留水平均为7 mg/kg,2-氯乙醇为940 mg/kg。食品稳定剂中检测到的环氧乙烷残留量大多为0.4~1.1 mg/kg。
